Quite literally, the best salmon I've ever eaten... Ingredients:
3 wild salmon fillets
2 TBSP olive oil
Juice of 1 lime
1/4 of a fresh jalapeno (sliced, seeds removed)
2 cloves of garlic (crushed)
Salt
Handful of cilantro (chopped)

Directions:
Stick it all in a Ziploc bag, mix to coat the fish, squeeze the salmon fillets into place so they are in one layer, remove the air and drop in sous vide water bath at 110°f for 45 minutes. Serves with an avocado, squeeze of lime, and salt.

Holy God, it was incredible. The texture was like nothing I've ever eaten.

My son Jakub says that he loves fish. 🐠 Well, he loves to say he is a big fisherman 🎣, but when I ask him what would he asked for if he would catch the gold fish, he usually says he would eat it instead of asking anything. 🤷🏻‍♀️ So today I wanted to cook something special for him. I must admit I don’t eat fish too often, but after today’s dinner it may change.
SALMON STEAK WITH CREAMY SPINACH🥬
For 2 portions you will need
250g of salmon fillet🐟
20g of butter
250g of fresh baby spinach🥬
60g of sliced champignons🍄
180ml of whipping cream🍶
1 minced garlic clove
20g of shredded Grana Padano/Parmesan🧀
2 slices of lemon🍋
pinch of lemon zest
pinch of Himalayan pink salt, pepper🧂
Season the fillet with pepper and lemon zest and place it (skin ⬇️) on a baking tray lined with a parchment paper. Bake at 1️⃣6️⃣0️⃣°C for about 20-25 minutes, depends on the fillet thickness. Meanwhile, melt the butter on a large pan on mild fire and add champignons. Roast until soft, then add spinach and cover the pan with a lid. It takes a few minutes until the spinach gets wilted. When done add minced garlic, salt and pepper and stir. Then pour the whipping cream and let reduce for few minutes until sauce-like consistency, then add the parmesan and stir together. Place the salmon steak on a plate and cover with the spinach sauce. 🧮1 portion is 9️⃣7️⃣8️⃣cals in total (📊 8️⃣0️⃣g fat, 5️⃣5️⃣g Protein, 6️⃣g Net carbs)👌🏼🎯

Вот чего-чего мне долгое время не хватало в Грузии🇬🇪- так это хорошего малосольного лосося🎣.

Готовый в упаковке здесь вообще не вкусный. Он длительного хранения 🗓 и вкус с ароматом оставляют желать лучшего 😞. Но! С тех пор, как в #батуми появился #carrefour наши совместные судьбы, с этим продуктом, значительно наладились 🤗!

.
И так, рецепт!👇👇👇 Нам понадобиться:
.
✅охлажденное филе лосося 400 грамм;
✅ 2 столовых ложки 🥄 розовой Гималайской соли;
✅ 1 чайная ложка тростникового сахара!
И ВСЕ!!!

.
Промываем рыбу под проточной водой 💧, убираем влагу с поверхности, бумажной салфеткой! 🧻 Подготавливаем стеклянную емкость с крышкой или пищевой пленкой. Обваливаем филе в смеси соли и сахара и помещаем в емкость, остатки нашей смеси высыпаем сверху. Закрываем емкость, и помещаем в холодильник на 24 часа ⏰.

Через 24 часа, достаем промариновавшуюся рыбу, промываем остатки маринада под холодной водой, опять промачиваем остатки влаги салфеткой и даем рыбе отдохнуть 30 минут.

Дело в том, что во время последнего промывания рыбы она может показаться вам слегка задубевшей, но филе размягчается уже через 30 минут, после смывания лишней соли. Во время поедания вкусно 🤤 присыпать #лосось черным перцем или #взбрызнуть лимоном 🍋!
