Best part of thinning out things in the garden is tossing some green stuff to the chickies.
Best part of thinning out things in the garden is tossing some green stuff to the chickies.
Sometimes cooking with #lesswaste means using up ingredients, like carrot greens or apple peels, that might otherwise get tossed. 🥕 Other times, it's finding ways to use produce once it's past its prime. If you have some lettuce that's starting to get soggy, instead of tossing it, @abraberens says to lean into the wilt: "Braised lettuce doesn’t sound great but it truly is — silky, tender, and surprising." 🥬 Grab tips for cooking wilted greens over on her IG & read more about her new cookbook "Ruffage" in the link in our profile. Back in December 2017, I was able to attend the Community Food Systems Conference from @newentrysustainablefarming and it was incredible. One of the reasons I decided to start this insta blog was because of this exact note I got from an older black gentleman during a “Systems disruptions” seminar where we were learning about the topic of race and white privilege in the food system. We broke out in small group discussions where I was able to listen to a diverse group of individuals and their experience with racism in the food system. At the end, I spoke up and asked the group what I could do as a white-privileged woman to because I thought having these conversations were hard because they got nowhere in our current political climate. Which looking back on now-was pretty naive of me to ask. We have to do the work and dive into these issues ourselves. Using people of color to answer these questions for us is not appropriate. Start unlearning by 1. Listening to POC and their experiences. 2. Diversifying your IG feed 3. Learn the history of POC in our food system by buying a real textbook that discusses these issues. The time ran out before the group could answer. But, before I left the conference room, I was handed this piece of paper in my feed. I never got this man’s name, but I’m so thankful he planted a seed for me to plant seeds for others. We have real injustices in our food system and I refuse to turn a blind eye to it. As Americans we have been taught to seek out cheap labor in order to keep food costs down. Many of these farm workers are immigrants on the H2-A program (a temporary Ag Worker Visa) simply because Americans will not do these jobs. Every time I’ve argued this, people say well we will grow our own food (which happened in California 1965 and Georgia in 2011-2012, and currently with these ongoing ICE raids—articles linked in bio).... ...continued in comments . . . . . #immigrantsmakeamericagreat #nutritionist #rd2be #dietitiansofinstagram #iwillnotstaysilent #antidiet #HAES #intuitiveeating #healthyfoodforall #foodjustice #socialjustice #communityfoodsystems2019 #sustainablefoodsystems #challengethestatusquo

Today, I am headed to Chicago to talk about dairy's role in sustainable nutrition. More people are wanting food that is not only good for them, but good for the environment. And this is affecting their buying decisions. I am excited to share and discuss with the @ndc_ie the on-farm practices producers are making to improve our dairies. My question to you is, what thought processes do you go through when selecting food at the grocery store? Cost? Nutrition? Sustainability? Organic? GMO/non-GMO? What influences your buying decisions? Follow a long in my stories to see more about the National Dairy Council conference!
MEN.

Year two of our vertical garden barrels. We have learned a lot. One they are heavy to move🤗. Another plants grow really well in them, so don’t plant anything you have to pull out to eat, like radishes as they get stuck in the holes. You need to place the worms in the soil every year as we are in Canada and the barrels and worms freeze solid. Yes the worms go in the soil they eat the compost in the pipe and feed the plants. Also don’t place fibrous compost in centre pipe to feed worms, they don’t eat them and we don’t like cleaning it out. Yes the compost does turn to soil but the worm tea is a more common benefit. Oh yea very important, don’t drill your worm holes above the soil level in the centre of the pipe, this is very important as fruit flies will get in your compost and then on your plants (no one told us most of these things, learned by trial and error)

Here's some food for thought: Ever wonder what a food system is, anyway? 🤔 🍎Food systems can be complex in ways- not only including the basic elements of getting food from farm to fork, but also the process and components of feeding a population. This can be tough- especially if it's not looked at being equitable and sustainable.♻️ 🥕Local food system is defined by Cornell University as "in which food production, processing, distribution, and consumption are integrated to enhance the environmental, economic, social and nutritional health of a particular place." 🥬There can be issues of food systems due to governance and politics that can result in food insecurity. More recently in the last few decades, an alternative framework and methods are taken in a new light to address and enhance food security. Other factors of the of the food system include sustainability, food production in the degree of waste and effects on the environment, and how food impacts health. 🍐What can you do to help make our local food system be more sustainable? Check out our Instagram and Facebook Story for an opportunity!• • • • #reducefoodwaste #localfoodsystems #sustainablefoodsystems #localcommunity #farmtofork #durangocolorado #laplatacounty #montezumacounty http://blog.bostonorganics.com/what-is-a-food-system-anyway?hs_amp=true https://www.futureoffood.ox.ac.uk/what-food-system
Gorgeous in green! 💚 Our team member @katherinesacks has been crunching on these sugar snap peas from the Grand Army Plaza @bkgreenmarket all week, and she can’t wait to buy more! 🌱 There’s good reason: most conventionally grown sugar snaps (like the ones you generally find at grocery stores) are grown with pesticides. They rank pretty high on the EWG’s Dirty Dozen list (a ranking of produce pesticide contamination). 😣 Buying organic sugar snap peas and/or from a trusted grower at the #farmersmarket is your best bet if #pesticides are a concern for you. 💡 Get more information about pesticides & agriculture in the link in our profile. ⬆️
Walk in a forest, you will find food. Wild, local, indigenous, maybe endemic. Walk in a forest with an Indigenous person, respect their knowledge, traditions and culture as they point out food they can gather, grab a handful for you to try. Learn and appreciate they have lived in these areas for generations and know the forest inside out. Appreciate they are the original Zero Wasters. Today I went hiking, lead by our guide who is from the Bateq people of Orang Asli. Yes the same tribe severely affected with the water pollution issues, but different community in a different location. We hiked in the secondary forests (that have been regenerating for around 50 years) bordering Taman Negara, the oldest rainforest in the world (130 million years old). He explained to us some of the forest plants that they gather: Wild ginger, a type of flower that tastes like bread, and forest grapes. When forests are cut down we lose our food biodiversity. We lose our food options because our limited options are intensive industrialised monocultures. We deprive local communities of their food source, deprive them of their food autonomy and make them reliable on food grown and packaged further and further away. We can’t afford to lose our food biodiversity and the knowledge that preserves it. Not if we want to sustainably feed everyone.
A simple swap for sustainable living. We buy our eggs from our local farm shop. They come in large cardboard flats, which we then reuse for growing our plants from seed. (I would tend to my own chickens... but we don’t have the space). We get our milk delivered in glass jars by our milkman. We put our empty bottles on our doorstep and they are collected and reused 100’s of times before being recycled. Before switching to using our milkman, our recycling boxes were bursting with plastic jugs. We use #milkandmore but I am sure there are many other farmers doing a great job! #ecoswap #milkdelivery #ecofriendly #plasticfreekitchen #reducereuserecyle #sustainablefoodsystems #plasticfree #noexcuseforsingleuse #supportlocal #eatlocal #kitchenpantry #slowliving #intentionalliving #votewithyourmoney #openplanliving #openplan #openplankitchendiner

Healthy food should be a basic fundamental human right 💯 • To build sustainable food systems we need policy change, health and food equity, and community based food systems. But we won’t ever get to where we are going if we don’t improve healthy food access first. This is why the #localfood , #realfood , and #slowfood can be perceived as #elitist • But if I’m elitist for thinking healthy food should be accessible to all regardless of socioeconomic status than so be it 🤷🏼♀️ #thefsnutritionist . . . . . #nutritionist #rd2be #dietitiantobe #foodaccess #healthequity #foodequity #buildalongertable #foodmatters #nondietapproach #sustainablefoodsystems #regnerativefarming #localfoodsystems #communityfoodsystems #communitynutrition #fightfor15 #foodisahumanright #foodsystemschange #paradigmshift #nutritioneducation #foodinsecurity #snapMatters #foodispolitical #foodjustice #foodsovereignty #foodtank

Rice is a daily staple food for over half the world's population and provides more calories globally than any other food. . It's also the financial backbone for millions of families and is the world's second most produced food item behind corn. . As such, it's potential for environmental impact, either positive or negative, is huge. . If I had a category worse than World Destruction, rice would be in it. . But unfortunately for us as consumers, there's not much we can do about it. . All the impact from rice comes from farming methods, which most of us don't have a hand in altering. . For now, keep eating that rice bowl, but if the opportunity arises, advocate for sustainable food, reduced greenhouse gas emissions, and fair labor practices. . It's not much, but for now, it's all we've got. . # #ecofriendly #sustainable #savetheplanet #sustainablefood #sustainablefoodsystems #rice #ricepaddies #sushilovers #sustainablerice #ricefield
Hey everyone, meet Emily! Emily is a journalist, with an emphasis on audio journalism, who is on a #mission to gather footage of all the organizations in the region working to build resilient communities around sustainable food systems. She visited hub operations in Bradford yesterday to get a more comprehensive sense of our work. She ended up visiting for hours, getting the full tour and seeing/hearing about all of our programming in the market, in the kitchen, on the farm, and within our educational and community outreach initiatives. Her overall goal is to gather media to be used in the storytelling efforts of organizations like @sustainableunh and @nhfoodalliance, so that they can better show people the evidence of the local efforts that comprise our state and regional commitment to building sustainable food systems. Thank you for the work you’re doing, Emily! We think it’s so important. Flexitarian. Plant-based. Ovo-lacto vegetarian. These days, there are a lot of ways to say we eat less meat. But no matter what you call it, a vegetable-focused diet is more popular than ever: the plant-based food & drink market grew a whopping 268% from 2012 to 2018. 📈 The new cookbook “Mostly Plants,” combines inspiration and recipes from the various vegetable-forward diets of its four authors, Corky, Tracy, Dana & Lori Pollan (yep, mom and sisters to THAT Michael Pollan). The #plantbased hashtag has been used on Instagram more than 22.5 million times. 🌱 We’ve got tips from the cookbook, link in our profile, so you can join in. (📷 @nicole_franzen)
Over half of our landfills are composed of organic waste, and this is what gives off methane gas and creates toxic liquid (leachate) that seeps into our soil and water systems. 💀 Food waste undermines the whole system. Resources in all forms are poured into growing our food, most of which is wasted before it even leaves the farm because of aesthetics rather than feeding the people who produce it for us. 👩🏽🌾👨🏾🌾 Our practices strip the soil of nutrients, desertifying our land and impacting global food security. Wasting food further is thus undermining the system, raising prices, and preventing us from being able to feed ourselves. 😨 . .Everything that exists is magick in some form, and composting is amongst my favourite ⭐️ Some may be grossed out by worms, by touching food scraps, or the idea of waste management, but it is so beautiful and important. 🐛💕 We take our food scraps and dead plant material from gardens and feed it to our worms, who then provide us with rich fertilizer for said gardens. It is an amazing way to connect with what you eat, and with Mother Earth herself. ❤️🌍
A light Greek inspired dinner!
This needs to be reposted over and over again 👏🏼👏🏼 Did you know the average farmer in the US is 58.3 years of age? And in the next 20-25 years or so, these farmers will need to retire meaning we need about 700,000-1,000,000 young farmers to fill these gaps. That’s roughly 28,000-50,000 young people PER YEAR willing to go into farming before we start to have major food supply issues. But what stands in a young farmers way??? Student loans. #thefsnutritionist See below 👇🏼 #Repost @youngfarmers with @get_repost ・・・ 📣 Action Alert! Yesterday we reintroduced our #studentloan bill in the House with bipartisan support. The Young Farmer Success Act (H.R. 3232) would allow farmers and ranchers to qualify for the Student Loan Forgiveness Program, alongside teachers, nurses, and other public servants. Antipasti! 🌶 I love bringing a dish like this to a party or BBQ. It is so colorful! You could add cheeses and nuts too. Here I have marinated peppers, olives, capers, and artichoke hearts. Improvise with what you have in the pantry.
Colorado cherries are here! 🍒 If you do enjoy fruit, I encourage you to source it organically and locally. Fruit grown organically and consumed in-season is much better for health, as it requires less pesticides, manipulation, and transport time. It’s also much more naturally aligned with our bodies biology and seasonal phases. Be mindful of keeping portions small, as well. Too much sugar at once, even in nature’s form, can be difficult for the body to handle. 🍒 Also, consuming the fruit sugars in their natural form (bound up in the food matrix with fibers and plant compounds) has less of an effect on insulin levels and therefore is less likely to lead to energy (fat) storage. It always helps to eat fruits and starches separate from fat/protein meals, both in terms of metabolic & digestive health!! 👍🏼 Just a little tip to add to your understanding in all your healthy pursuits 💖 Wishing you all a magical day!

Hear Me Out: Obesity and BMI indications have a terrible history that I believe is complete and utter bullshit. The measurement was created over 200 years ago and was never meant to indicate fatness. The BMI indication does nothing to celebrate body diversity-we are NOT supposed to look exactly alike, does a bad job looking at bone density, genetics, and/or autoimmune conditions, and has a very racist history. We can’t use obesity to measure the issues of food system and public health because it’s like saying those in smaller bodies consume the perfect diet and workout the right amount and those in larger bodies do everything wrong 🤬 which leads to a plethora of misdiagnosis and extends diet culture into the realm of healthcare treatment. How many of you know someone that has been told by a doctor they just need to lose weight without actually doing a proper assessment?!? I know MANY who have experienced this. • Swipe to see better indicators of an unhealthy food system 👉🏼 anything else you would add?? Thai Noodle Salad 🥢 This is the perfect noodle salad to make during hot weather and serve chilled. It is one of my faves from @feastingathome with tons of veggies and a delicious peanut sauce. Seriously, the peanut sauce is amazing! I always double the quantity. Here I used fresh red cabbage, red and orange bell peppers, snow peas, scallions, carrots, cucumber, jalapeño, cilantro, and mint. But you can use whatever veggies you have on hand. And I used rice noodles, but you could use any kind. Mix in peanut sauce and top with peanuts. You can also add tofu. Soooo good! Get the recipe @feastingathome 🥢

Do you want to support ecological approaches that help farmers? Do you worry about the pollution of air, water, soils, and the adverse effects these damages have on ecosystems and climate? Are you concerned about how land is used today, the conservation of our remaining natural areas and biodiversity, and the steps we are taking to regenerate it? We are too. We need your support to demonstrate the importance of applying appropriate ecological methods for sustainble farming and helping farmers reduce their costs and produce cleaner food. You can help us and have an enormous impact in our village in Boyaca, Colombia, an iconic agricultural center of the country with a unique native gastronomy. We are launching our crowdfunding campaign today! It is live. Our mission is to provide a service to our community in a small-scale extension project building models and workshops of sustainable appropriate technologies. If you can support us by donating and spreading our campaign to potential folks you can help this dream become a reality and truly change and impact the lives of students, farmers, and the community. https://chuffed.org/project/support-ecological-farming-in-colombia (link in bio) We are so happy and excited to be reaching our dream, on our farm Finca Roca Madre as we have aptly named for its belief in strong feminine imagery and as a call to take care and work our lands from the base. Understanding and valuing the abundance the land gives us, approaching it with reverance and solidarity. Thank you!!!
