Introducing the newest member of our La Petite Roche specialty cheese line. This is "Queso OaxacaCabra" our take on a traditional Mexican style mozzarella. Oaxaca is the Mexican state where the cheese is believed to have been first produced by Italian Immigrants in the early 1950's. The cabra at the end denotes that it is made from goat's milk. During the cheesemaking process, the cheese is stretched (pasta filata) and then rolled up in a ball for the finished product. This style of cheese is widely used in Mexican cuisine for quesadillas and empanadas.
