Guinea Fowls are similar to a pheasant in that they average roughly 1.2kg, and are suitable for 2-3 people. Its delicate flavour sits somewhere between duck and chicken, and is a very lean bird so should never be overcooked. — Baste your bird generously in butter and roast in a 200 degree oven for about 40 minutes, quarter turning the bird every 10 minutes. Pigeons are in store in both Fitzroy and St.Kilda now! They’re a small bird, and are super lean. Sear your pigeon in a hot pan with butter until browned, then pop into an oven at 180 for 15-18 minutes until nice and juicy. Rest for 10 then devour!
