I made @rachlmansfield paleo pumpkin bread because I’m not quite done with pumpkin yet. I modified this recipe since it called for collagen and I’m vegetarian. Instead I used banana flour which is a low carb grain free flour that can be substituted for just about any flour. The pecan crumble on top is 👌 and the bread isn’t overly sweet which is a nice change from the treats I normally make. - - - Banana flour is a great option for anyone who is following a paleo diet, diabetic, vegetarian, has a nut allergy, or is celiac/gluten free. It’s derived from green bananas, is low in sugar, and is a resistant starch (aka a type of prebiotic). Basically resistant starch resists digestion which is why there is a minimal spike in blood sugar after consumption. It also helps to feed the good gut bacteria and produce short chain fatty acids!
