CONFIT-to cook slowly in fat for a long period of time. Chicken confit cooked for 10 hours at 250F with bay leaves, garlic, thyme and rosemary. Slight dry cure with truffled sea salt, ground celery seed and ground dried porcini. Plated with parsnip purée, wilted spinach and heirloom tomatoes and porcini oil. #RD
