Banana, blueberry, flaxseed oil, peanut butter, cacao, and soy milk all blended into a delicious smoothie. So damn good. Usually I hide greens in my smoothies but I just needed to treat myself to a super yummy and sweet smoothie. 👌🌈
What I ate when I could finally eat again. I disappeared for a little bit because I'd lost my appetite because of extreme discomfort with any food I ate. Had to make myself throw up because my food was only sitting in my stomach and not digesting properly. I was so excited to make food again. I was only eating banana and peanut butter on bread because I was so afraid of not being able to keep food down. I ate tofu scramble, grilled cheese sandwich, homemade hash brown, and some vegie delights sausages. How amazing that all this is vegan. It's food that doesn't contain animal products. 🌈🙏A-M-A-Z-I-N-G 🙏🌈 My brain is fried and I'm going to bed. Goodnight. Also thank you to everyone that's asked if I was okay after my accident. I'm doing great and only have minor discomfort from where my seatbelt was and don't have any bruising 👍👍
I finally got around to making noodles for dinner tonight. I never ate noodles because most of them were egg noodles or had colour sauce added to it. Then I finally found some that were flour, water, salt, and turmeric!!!! I started by cutting tofu into small cubes and frying it on a non stick pan. I let it brown on almost all sides and transferred it to a clean plate. Then I prepared my shiitake mushrooms by soaking them in water till soft. Then squeezed all the water out from it and chopped them into pieces. I put them in the previously used pan and added 1tbsp of soy sauce and 2tbsp of water. I let it cook down till there was no more liquid. I added my cauliflower and carrots and a little bit more water and covered everything to steam. I took my boiled noodles and rinsed it in cold water and drain. I added sesame oil and a bit more soy sauce and gave it a good mix. Once the veges were soft I added my noodles and tofu. Gave that a really good mix too and tasted it for seasoning. I didn't really need to add much so I plated it up! I devoured it because it reminded me of my childhood eating noodles with just sesame oil and soy sauce. I hope you guys make this and enjoy it.
LOTF!!! I can see why everyone raves about the beyond meat patties because it's so similar to actual ground beef. Taste was slightly off if you ate it by itself but that's not really how you would eat burgers. It's everything else that you put with it makes it a burger. I got the HSP but I didn't really understand it and all the flavours that were going on. Good but really weird.. 🌈
Yes yes yes!!! I made this blueberry, banana and oatmeal cake that was supposed to be muffins but I didn't have a tin. Now I can use up those 200 bananas I purchased!! The cake was supposed to have a whipped coconut cream on top but I messed it up but this time I will get it right!! I'm also wearing Kester Black on my nails in the shade 'nightshade' which is a beautiful dark purple. It's also completely vegan/ cruelty free and just generally free of bad things. I was so tempted to buy the red shade too but the purple just got me.
All this for $10!!! What a steal!!!!
I ate half a tub of @littleislandnz coconut caramel ice cream for breakfast so I'm trying really had to balance that out right now. Home made vegan shepherds pie with green cauliflower, broccoli, peas and corn. 🌈🌈🌈🌈🌱

I got up this morning at 6.30am to pack my things, say goodbye to my partner (which kindly walked me to the bus stop) and bus to the airport. When it was almost time to board the plane, my 9am flight got cancelled. I ran to get my suitcase and re check in and hopefully get the next flight back to Auckland but the earliest I could get was 4pm!! I poddled around trying to figure out what to do so I hopped on more busses and went to my chiropractor to get adjusted before flying. Then went on some more busses to get back to the airport at 3pm then finally got to go on my plane and come back home!! And then I made mashed potatoes to top my cottage pie with and baked it and ate it. So my highlights for the day was -Taking 6 busses and only paid $5 for it. -Getting adjusted -Being in Auckland -Having the luxury of a friend picking me up from the airport -Eating hot yummy food!! 🌟How was everyone else's day?🌟
One of my favourite places in Christchurch! Everyone that works there is super nice and they have so many vegan options!!!

Holy Moly!!!! This meal was so big I didn't even eat till dinner. And even then I wasn't very hungry. I went out with my partners work crew for dinner and didn't get any photos because the lighting is so dim there oh well. Christchurch is very very cold. It hit the negatives in the early morning.
I'm in Christchurch with my partner eating potato and leek soup with sourdough bread on a cold Winter night. I'm not sure how this can get any better.
I made an awesome dinner with Frys sausages wrapped in pastry. Can't skimp on the ketchup and mustard. Carrot sticks and nuts to look healthy. Corn chips and refried beans with lime juice. Then a ginger beer with a lime. It came from my garden so it's gone from green to yellow. It's super delicious too
That tofu and that quinoa patty! So good!! 👌🌱🌈
I made nachos and I think I'm about to explode!!!! I told myself I wasn't going to eat so much but I served myself way too much and then ate it all!!!! I topped this with 'mince' mixture, @angel.foodnz mozzarella, refried beans, and @coconutcollabnz natural yoghurt. I made the mince mixture with mushrooms, onion, garlic, carrots, tomatoes, peas and some bouillon cubes and salt and pepper to taste then tvp. The mix doubles as shepherds pie mix too so I'm going to freeze it and when I get back from my trip I will have food at home to heat and eat 👍😎 #efficiency
