◾Vankaya Kura / brinjal curry little less spicy and less oily

◾Phulkas ghee smeared
Recipe for Babycorn Capsicum Pepper Fry:
Boil water with pinch of salt and cook sliced baby corns until bit soft, remove and set aside.
Heat a tbsp oil in a pan splutter 1/2 tsp mustard 1/2 tsp jeera, curry leaves, hing. Add 1 sliced onion, 2 sliced garlic saute until they turn bit crunchy. Add cooked baby corn, sliced capsicum, 1/4 tsp turmeric powder, 1/2 tsp jeera powder, 1 tsp black pepper powder mix well and cover it for 5 mins and cook in medium heat. Remove lid give a quick stir add garam masala if needed or just ignore and serve.
Recipe for Vankaya Kura:
Roast below mentioned in 1/2 tbsp oil and grind to smooth paste along with tamarind paste 1/2 tsp and salt adding water.
Peanuts – 1/2 cup
Sesame Seeds – 1/4 cup dry roasted
Cumin seeds – 1/2 tsp
Coriander seeds – 1 tbsp
Dry red chilies – 8 no or can be reduced
Make a slit in the bottom of the brinjal (6 numbers) from bottom till middle, stuff the masala paste. Heat 2 tbsp oil in a pan and place the brinjals cover and cook until they are 75% cooked.
Now slowly pour in the leftover masala mixed with half cup water cover and cook until brinjals and masalas are fully cooked.
Added few curry leaves to the base for some extra flavour. .
