Anxiously awaiting my keto dinner companion. To wait or not to wait...? Lamb medallions marinated for 2 days in garlic, salt, olive oil and rosemary; topped with a sherry vinegar, garlic, rosemary, and za’atar concoction I made from the pan jus. Tzatziki made with Meyer lemon 🍋 which works well with the baked butternut squash; leftover Greek salad from yesterday’s dinner with mixed greens. You snooze you lose! I’m going for it!
