#Maitake Salad 🥗 Save a chicken, eat a hen of the woods -aka- #maitakemushroom 🍄 Not to be confused w #chickenofthewoods (completely diff mushroom!) . Maitake tastes and smells like boiled chicken (to me, at least, and obviously I eat them raw!). But, lots of people replace other mushrooms with maitake for a richer flavor in their cooking. . Maitake Mushrooms are especially #anticancer (namely breast, liver, and lung). They are loaded with #betaDglucans , which are specific #polysaccharides that stimulate the immune system. These same polysaccharides stabilize #bloodpressure , #bloodsugar , and have a direct effect in #freeradicals . . Now, one must know that eating a #medicinalmushroom every blue moon or so is not going to be some magic cure-all. As with most superfoods, consistency is key, and #maitakemushrooms have a cumulative effect. So be patient, but consistent. . Brian & I both don’t really care about Valentine’s Day or the materialistic bullshit that comes along with it. BUT we do love a lot of the same things like pasta, mushrooms & most importantly each other & being together. So for “Valentine’s Day” or whatever (the day after because I work a lot of nights) we spent the night cooking together,(&eating doughnuts in the process)made this kick ass mushroom lasagna (7different kinds of shroomies!)w/ a cheesy shallot wine sauce(holy crap so tasty).Cuddled up on the couch, drank some wine, watched Star Wars ll(because I’ve recently discovered I love Star Wars). This Chicken Marsala should be on everyones “must eat” list! This is the kind of dish that might get overlooked as chicken can be boring. Somehow @acantochicago has made this wildly popular dish anything but boring! Tender and juicy chicken breast is seasoned so well while maintaining a slightly caramelized texture. Roasted root vegetables and hen of the woods mushroom in a reduced Marsala wine sauce make this a savory and delightful dish. It’s not heavy yet it’s still hearty - perfect way to end a day of shopping/ice skating/Santa Claus lap sitting! Located just south of Madison, on Michigan Avenue, Acanto is not a tourist trap, in fact it’s quite a charming spot serving solid dishes and impressive cocktails. I always recommend a stop here for lunch or dinner to friends and family who wants something good with a Chicago feel. Servers are always friendly and accommodating. Dinner last night at Hen of the Woods in Burlington Vermont. Awesome. Slide see all the courses these talented and hard working cooks prepared for Is over these roaring fires! (Thank you @mzamora42 for the fantastic recommendation!). Stared with Parker House rolls and peel & eat shrimp, followed by the most delicious steak tartare EVER...then Hen of the Woods mushrooms with bacon and a poached egg, then a fantastic chicken fried rabbit (sorry, Bugs) with a gorgeous honey glaze and crispy, salty salad atop. Dessert was a deconstructed pumpkin cake with pumpkin ice cream, an apple cider glaze and dried (super tart) apple slices. So.
