Preheat the oven to 350. 2. On a cookie sheet, evenly spread cubed potato bread. Bake for 10 minutes until bread is lightly golden brown. Let cool completely. 3. In a large saute pan, add butter and olive oil spray to medium heat. Once butter is melted, add chopped onions, carrots and celery. Cook for 10-15 minutes until veggies are soft. Let cool and transfer to a large mixing bowl and stir in fresh herbs. 4. Next add cooled bread and stir together. Add 1 cup of veggie stock and mix together. Add another 1/2 cup of stock to mixture. If bread has absorbed all the liquid, no need to add remaining stock. Next add egg and mix. This will keep the muffins together 5. Next spray muffin tins with cooking spray. Add mixture to muffin tin and make sure to pack the stuffing tight to make sure muffins don't all apart. 6. Bake at 20-30 minutes or until muffins are golden brown and crispy. 7. Enjoy!
