So, answering the question on my FB profile photo..... Being honest, I've been living a huge chunk of my life in fear..... All kinds of it, unfounded, primal, realistic, etc...... Fear has influenced many of my acts and decisions in life. It has added pressure and stress to my thinking, my every day interactions and my physical body. Fear has had its positive sides too, as of keeping me aware of my lifestyle choices. As of helping me observe its effects on me and the world, ways to cope with it.... and choices available to embrace it..... Fear has been my at times silent, at times noisy companion..... It's imprinted somewhere in my subtle body.... My awareness, free will and love are my allies here. Fighting it is not an option... just as fighting anything.... Fear has been my tireless teacher of acceptance and forgiveness.... It is not a "monster under my bed" anymore. It's a "family member". I've talked to suicidal people, who, as you might know, disguise themselves quite well in the crowd. And I learned something important from them: "The thought about 'leaving' has always been on the back of my mind. I know it's there, it doesn't bug me anymore. I got used to it. 'Taking my life' in order to stop it has been a possibility for me for permanent relief. But then, oddly enough, Life distracts me from that thinking and I realize, gosh, I have so much to do! To busy to suicide today." Acceptance of what is, in order to have a better quality of life. This is the lesson. Like my friend Nina once said: "You know, there are people who live with diabetes, others who live with the hip replacement, etc.. And you live with the fear/anxiety. Accept it and be grateful for it. This is YOUR life. Just live it."

Cheeseburger Casserole Makes 4 servings Per serving 1 Lean protein 2 ½ vegetables 1 ½ condiments 1 lb lean ground beef 1 large head of cauliflower (orange, if you can find it) 2 tbsp. almond flour 1 1/2 cup unsweetened almond milk 1 1/2 cups 2 % cheddar cheese, grated (divided) ½ tsp seasoning salt In a large skillet over medium heat, cook ground beef until browned. Drain any excess fat. Cut the cauliflower into florets, and steam them for about 5 minutes, until tender on the outside but still crisp in the middle. In a saucepan, whisk the milk and almond flour together until smooth, and the mixture comes to a boil, then stir in 1 cup of cheddar cheese. Add seasoning salt, to taste. Combine beef, cauliflower, and cheese sauce. Taste and add another pinch of seasoning salt, if desired. Pour mixture into a casserole dish, and sprinkle with the remaining 1/2 cup of cheese. Bake at 350 F for 20 minutes.

Grilled Buffalo Shrimp Ingredients: 11.2 ounce raw, peeled and cleaned shrimp - should yield 7 ounces cooked (1 Lean) 1/4 cup Frank's Hot Sauce (2 Condiments) 1 tbsp. light butter - I like to use Land O Lakes Light Butter with Canola Oil (1 Healthy Fat) Directions: Combine butter and hot sauce in a small bowl and microwave for about 45 seconds or until butter is melted. Stir until combined. Place shrimp on skewers. I basted very lightly with the sauce, saving the majority of the sauce for when they were done cooking. Grill until shrimp are cooked, about 2 minutes on each side. Baste with remaining buffalo sauce. Don't forget to weigh your shrimp after they are cooked. You should have 7 ounces of cooked shrimp, but if you are serving the ranch broccoli slaw with this meal, you will only need 3/4 Lean which is 5.25 ounces cooked. 1 Serving with 1 Lean, 2 Condiments, and 1 Healthy Fat (You still need 1 more Healthy Fat)

Grilled Vegetables with Tomato seed vinaigrette Makes 6 servings and per serving you receive: · 3 greens · 2 healthy fats · 3 condiments Ingredients: 3 tbsp. Sherry Vinegar 1 tbsp. fresh thyme leaves 1 tbsp. mustard seed 1 tsp red pepper flakes 1 cup over ripe heirloom tomatoes 1/4 cup olive oil 1/4 tsp. salt and 1/2 tsp. pepper 1/2 cup red peppers cored and seeded 2 cups yellow squash cut lengthwise into 1/8 inch slices 1 ½ cups sugar snap peas 2 cups green squash cut lengthwise into 1/8 inch slices 1 cup portabella mushrooms In a small bowl, whisk together the vinegar,thyme,mustard seeds and red pepper flakes. Halve the tomatoes crosswise and gently squeeze out the seeds and juices into the bowl with the vinegar mixture. Whisk together and drizzle in the oil. Season with salt and pepper. For the vegetables, heat the grill. Brush all the vegetables lightly with some of the marinade. Transfer all the vegetables, except the sugar snap peas, directly onto the grill until lightly charred 7-9 minutes. Turn and cook 3-5 minutes more. Remove and place on serving platter. Place sugar snap peas on aluminum foil sprayed with pam on grill. Cook for 2 minutes. Remove and add to serving platter. Drizzle with remaining marinade. Serve warm or at room temperature

Buffalo Chicken "Pizza" Ingredients: Crust: 1/4 cup egg beaters (1/8 Lean) 1/4 cup reduced fat cheddar cheese or Mexican cheese (1/4 Lean) 1 cup grated, raw cauliflower (2 Greens) Toppings: 2.25 oz chicken breasts, cooked and chopped (3/8 Lean) 2 tbsp Frank's Hot Sauce (1 Condiment) 1 tbsp reduced fat ranch dressing (1/2 Healthy Fat) 1 tbsp reduced fat cream cheese (1 Condiment) 1/4 cup reduced fat cheddar or Mexican cheese (1/4 Lean) Directions: Preheat oven to 425 degrees. Place parchment paper on a cookie sheet and spray with non-stick cooking spray. Combine grated cauliflower, 1/4 cup cheese and 1/4 egg beaters in a medium size bowl. Spoon mixture on prepared pan. Use the back of the spoon or your hands to thin out mixture and form a circle about the size of a dinner plate without the rim. Bake for about 25 to 30 minutes. Flip the crust over and bake for an additional 10 minutes. In a small bowl, combine chicken, hot sauce, ranch dressing and cream cheese. Spread on prepared crust. (You could also add your extra green at this point such as 1/2 cup diced celery or bell peppers). Top with 1/4 cup of shredded cheese. Broil until cheese is melted, about 5 minutes. 1 Serving with 1 Lean, 2 Greens (you need 1 more Green such as 1/2 cup celery), 2 Condiments and a 1/2 Healthy Fat

Asparagus Salad Ingredients 4 oz moderate-fat cheese, such as part-skim mozzarella (moderate-fat cheese = 3-6 g of fat per 1-oz or ¼-cup, shredded serving) ¾ cup (9 medium 5-¼” to 7” spears) asparagus ¾ cup (2 medium 2-3/5”) tomatoes, chopped 2 Tbsp fresh basil, finely chopped 2 Tbsp Newman’s Own® Lighten Up Balsamic Vinaigrette Dressing ¼ tsp freshly ground black pepper Directions Trim ends from asparagus, chop tomatoes, and shred cheese or cut into cubes. Bring medium-sized pot of water to boil, drop in cleaned asparagus, and boil 5 minutes or until asparagus is al dente (tender-crisp). Drain asparagus and quickly put into a bowl or pot of ice cold water (this stops asparagus from over-cooking). Add remaining ingredients to cooled, drained asparagus and chill. Zucchini Ravioli Makes 2 servings Per serving 1 Lean protein serving 3 vegetables 3 condiments 1. 2 medium zucchini – total weight 10 ounces 2. 1 cup part-skim ricotta 3. 1/4 cup parmesan 4. 1 egg 5. 1/4 cup chopped fresh spinach (optional) 6. 3/4 cup low carbohydrate marinara sauce such as Rao’s Marinara. 5 grams of carbohydrates or less per ½ cup Toppings 9. 3/4 cup low fat mozzarella 10. 2 Tbsp parmesan Instructions Preheat the oven to 375 degrees F. Using a potato peeler, slice the two sides of each zucchini into thin flat strips, peeling until you reach the center. You will end up with 25-30 slices. In a small mixing bowl, combine the ricotta, parmesan, egg, and spinach. Separately, fill the bottom of a 9×13 baking dish with the marinara sauce. To assemble the zucchini ravioli: overlap two strips of squash then overlap two more strips perpendicular on top of the first strips, creating a T shape. Spoon 1 tablespoon of filling in the center of the squash then bring the ends of the strips together, overlapping each other. Turn the ravioli over and place in the baking dish to seal the bottom. Top with mozzarella and more Parmesan. Bake the zucchini ravioli for 30 minutes, until the zucchini is al dente and the cheese on top is turning golden brown.

Spicy Tomato Shrimp with Zucchini Pasta Ingredients: 2 tsp olive oil (2 Healthy Fats) 1 clove garlic, minced (1 Condiment) 1/2 cup zucchini, chopped or spiral sliced (1 Green) 1 cup Great Value Italian diced tomatoes (2 Greens) 7 oz shrimp, cook, peeled and deveined (1 Lean) 1/4 tsp crushed red pepper flakes (1/2 Condiment) 1 tbsp fresh basil, chopped (1/16 Condiment) Directions: In a medium sized skillet, add 2 tsp olive oil and garlic over medium high heat. Saute garlic until lightly brown. Add zucchini and cook for 2 to 3 min or until zucchini is slightly soft. Stir in the diced tomatoes and shrimp. Sprinkle fresh basil and crushed red pepper over the mixture and simmer for an additional 5 minutes or until basil is wilted and heated thoroughly. 1 Serving with 1 Lean, 3 Greens, 1.56 Condiments, and 2 Healthy Fats

Baked Ziti (Zoodles) Makes 2 servings Per serving 1 protein 3 vegetables 1 condiment • 2/3 pound Zucchinis • 2/3 pound Canned Tomatoes • 2 Tablespoons Low Fat Ricotta Cheese • 2 Tablespoons Low Fat Mozzarella Cheese • 3 cups MSF Meal Starters Grillers Crumbles • 1/2 Teaspoon Minced Garlic • Non-stick pan spray • Hot Chile Pepper (optional but awesome! would count as additional condiment!) 1. Use spiralizer to make zucchini noodles, drain and set aside 2. Preheat oven to 400 F 3. With a large oven proof frying pan or medium dutch oven cook the MSF products with non stick spray on medium heat until crumbles is cooked through 4. Push the MSF crumbles to the edges create a well in the middle and cook garlic in it for 30-60 seconds until fragrant 5. Add crushed tomatoes to pan 6. Bring to a boil, reduce to simmer and cook on lowest setting covered for 30 minutes 7. Uncover and reduce sauce to just slightly thicker than a normal tomato sauce, the zucchini will give off liquid to thin to the right consistency 8. Place zucchini in, and stir to combine everything together 9. Top first with ricotta in teaspoon allotments and distribute mozzarella over top evenly 10. Cook in the oven at 400 uncovered for 15-20 minutes until zoodles are tender 11. Before serving let rest for 10 minutes
