Happy Thanksgiving everyone! Most people prefer traditional food on turkey day, so I always try to innovate and improve using technique rather than focusing on creativity in the end product. I make sous vide turkey with different preparations for light and dark meat. And I also try to sneak in one unusual dish. This year I used Japanese purple sweet potatoes for the traditional sweet dish with brown sugar and marshmallows. It was beautiful and less mushy than orange yams can be.
