Begin by browning chopped pork chorizo sausage, I use a little canola oil or bacon fat to start the browning. Then remove the meat to a bowl, and add a box of filiini pasta and stir, toasting it lightly. Next, add in canned diced tomatoes plus water (1 1/2 cups per box of pasta). Stir and deglaze the pot, scraping up those delicious brown bits! Simmer until noodles are softened, then add canned black beans and frozen or canned corn. Cook until heated through, add a ton of freshly chopped garlic, and add the meat back in! Serve!! 8 links chorizo, one box pasta, one can each of tomatoes, beans, corn, garlic to taste. (For our family of 9, I double this!) Use organic products when possible!
