Meal prep from yesterday making my life so much easier already 🙌🏻 🥙 meal prepping doesn’t necessarily mean you have to make full on meals ahead of time - All I do is just wash, chop, and prepare all my fresh produce and put in sealable containers so that I can just take a little bit of everything, throw it into a bowl and heat right up! This way I save sooo much time and still have meals with lots of variety. Highly recommend setting yourself up for the week with some meal prep 👌🏻. Also, you guys all voted for my Spanish rice recipe, so here it is below 👇🏻! I paired it with some black beans, roasted sweet potato, edamame, mushroom, steamed broccoli, spinach, romaine, and some salsa and it was danggg good 👅
EASY and HEALTHY SPANISH RICE🍚:
- 1 1/2 cups organic long grain brown rice, already cooked
- 1 clove garlic, minced or very finely chopped
- 1/2 tbsp coconut or olive oil
- 1/2 sweet onion, diced (about 1/2 cup)
- 2 cups vegetable broth
- 1/2 can organic crushed tomatoes
- Large handful spinach
- 1 tsp oregano
- 1/2 tsp ground cumin
- 1/2 tsp salt
Cook your rice according to your package instructions.
In a medium sized pot, add oil, garlic, onion and sauté on medium-high heat until onions have softened. Pour in 1.5 cups of the cooked rice.
Sauté this mixture for a few minutes until rice has browned a bit.
Add in vegetable broth, crushed tomatoes, and seasonings, bring to a fast simmer, cover with lid, and bring to a very low simmer. Cook for 25ish minutes until most liquid has been absorbed.
Stir in spinach.
Remove from heat and let sit for 5 minutes.
Remove lid, stir/fluff rice with a fork and serve!
