@claireroselt it's German potato salad Claire, everything to taste but might be a bit difficult if you don't know the taste your aiming for but give it a go! Steam or boil potatoes then peel (waxy ones). Slice thinly into a bowl. Add salt, light olive oil (originally sunflower oil but I avoid it now), vinegar (I use apple cider vinegar now), and mix up some vegetable broth and pour some in. Finely chop some shallot (like really fine!) and scrape in. Mix everything gently and try. See how the taste is and try and balance the flavours, it should taste great and you'll probably need more salt than you think (I use Himalayan pink salt). Let it sit for 30 minutes, this is when the magic happens! Taste test a bit after 15 mins and adjust if necessary... hope you like it! Its one of my favourite things to eat! If I'm being REALLY clean then I don't use vinegar, I use lemon juice, also absolutely delicious.

In Bavaria where I stayed they used to use Thistle oil I was told. As they said they wanted a very bland oil.
